I was very excited to attend the grand opening of Tomaso Maggiore’s newest spot, Vivo! Ristorante. Vivo is located in a hot new restaurant corner with Sumo Maya and Scramble.

32When you walk into the restaurant you can smell olive oil and fresh bread. Tomaso has partnered with Elio and Salvo Menta, brothers known for their wonderful olive oil from Italy. He had a vision opening a restaurant that would feature a mozzarella bar and serve modern Italian cuisine, including pizzas from a wood-fired oven.

The 12-inch Margherita Pizza they served us was served hot and crispy with the perfect amount of buffalo mozzarella, basil and tomato. They only use Petra flour, 11 San Marzano tomatoes and Fior di Latte mozzarella. I also tasted the Arugula, Pear and Walnut Salad, which is one of my favorites especially if you add candied walnuts and shaved gorgonzola. Vivo serves amazing pastas made with an intricate process called the “Delicate Method“. The Vivo Ravioli is delicious, made with spinach, ricotta, mascarpone, and hazelnut-butter-truffle essence.

There is so much more on their menu…I will have to go back and try everything! Vivo! is open every day from 11:30 a.m. to 11:30 p.m., with happy hour from 4:00 p.m. to 6:00 p.m. daily.
